Fried Butternut Squash Ravioli..That.Just.Happened.

So guess who has a bowl of leftover butternut squash puree?
Heh...here's a hint...
She is far less witty than she thinks...
She wears 3 pairs of socks to work...weird-o..
She wafts eu de cow when she walks by...
That last one was a total giveaway.

I mean what would you do with the golden, tasty goodness?

You would go out and buy some of these babies....

Oh yes, the won ton wrap.
You can put very nearly anything in one of these and boil it like ravioli or do something daring...

Fry it.

Since "Daring" is the middle name I wish I had, no thanks to The Heat for the ODD one I was gifted, I did just that..I fried.
Fried I did.

I'm southern. We breathe...we fry..just like that.

So here we go!

To fry these you need egg and breadcrumbs.
I wanted to use Panko, but didn't have enough so had to settle for normal breadcrumbs with eye-talian seasoning.
They worked great though!

So give them each their respective bowls or dishes and ignore them for a minute.

Grab one of yer wraps..

They have circles too..those would be neat.

Wet your finger..(not with your mouth you heathen)...

You really only need to wet two of the edges..for stickiness...sssss..

Now get your blurry ice cream scoop...

And drop half a scoop of your (plain) butternut squash puree...
This stuff needs nothing to enhance it's natural awesomeness..ya dig?

OK, now fold the wrap over...

..using your ugly man-hands...
And crimp the edges so nothing leaks out..or in!

Now, working one at a time plunk yer ravi's in yer egg..

Shake the excess off, now cover in breadcrumbs...

At this point you could go ahead and put them in the skillet of hot oil.
And that would be fine.
Really, it would.

But if I were you...and judging by the statements made at the top of this post I'd say you have something new to be thankful for...I would do this....

Plunk in the egg one more time....

...shhhhhhhhhh you don't have to tell.....
...now plunk again in the breadcrumbs...

You did well.

On to the frying pan!

Hot oil, hands away, place them into the hot oil in the frying pan...

It only takes 2-3 minutes for them to nicely brown, then you flip them...

Pretty!

When they are nicely crisp and brown, place them on a wire rack over a paper towel..

Pssssst..see the two alarmingly non-tan ones at the top?
I only breaded those ONCE.
They are the un-fun ones at the party..just saying..

You could totally grab these and eat them as is..I ate like 6 like that..
But since I have been slightly obsessed with sun dried tomatoes allllll summer I made a pesto...

Using these ingredients..which I had on-hand...weird-o.

Make them. You won't regret it.

Good night!
